Oklahoma Fried Onion Burgers

A few weekends ago we were all watching Cook's Country together (yes, my 5-year-old loves to watch cooking shows. It warms my heart). They were making something called Oklahoma Fried Onion Burgers and they looked mouthwateringly good.

For some reason that episode was on at least 3 or 4 more times within a two-week span and I finally told SP I had to make them. So, he picked up some ground beef at the store and I planned to make them one Saturday for dinner. Then we had a ridiculously huge lunch and couldn't stand the thought of eating again. The ground beef went into the freezer, where it was promptly forgotten. I finally remembered that I wanted to make the recipe and put the burgers on the menu two nights ago. They were so good I had to blog them immediately.

I thought these would be more complicated but it's actually a very easy recipe. All you need to do is plan ahead enough to let the onions sit in the colander. SP said they tasted like a McDonald's hamburger only a million times better. Baby Girl had the mini burger in the center of the picture above, sans onions because she isn't a fan. They even reheated well the next day.

1 large onion, peeled, halved and thinly sliced
salt and pepper
1 lb ground beef
1 tablespoon butter
1 tablespoon vegetable oil
4-8 slices American cheese
Mayo, mustard and pickles, for serving
4 hamburger buns, toasted

Combine the onion slices and 1 teaspoon of salt in a bowl and toss to combine. Transfer the onions to a colander and let sit for 30 minutes, tossing occasionally. Transfer the onions to a clean dish towel, gather the edges together and squeeze out as much liquid as you can from the onions. Do this over the sink or a large bowl since the onions will have quite a bit of liquid in them.

Divide the onions into 4 separate mounds on a rimmed baking sheet. Form the beef into 4 lightly packed balls. Place the beef balls on top of the onion mounds and flatten the beef firmly (use your palm) so the onion adheres to the beef. The patties should measure 4 inches in diameter. Season the beef generously with salt and pepper.

Melt the butter with the oil in a 12-inch skillet over medium heat. Using a large spatula, transfer the patties to the skillet, onion side down. Cook for 6-8 minutes, until the onions turn a deep golden brown and begin to crisp around the edges. Flip the burgers, then increase the heat to high and cook until well browned on the second side, about 2 minutes.

Add 1 or 2 slices of cheese to each burger and allow to melt. Add mayo, mustard and pickles to the top buns, then place each burger on a bottom buns. Serve immediately.

Burgers with Brie, Caramelized Onions, Arugula and Garlic Mayo

I love a good burger, don't you? These Burgers with Brie, Caramelized Onions, Arugula and Garlic Mayo have been on my radar ever since Kate posted them. What's not to like about Brie and caramelized onions?

Sorry for yet another bad sandwich photo but you get the gist. These were delicious. SP mistakenly bought the "intense, earthy" Brie rather than our usual "nutty and buttery" Brie, so the cheese really shone through. Between that and the peppery arugula, we were glad for the sweetness of the caramelized onions.

1 lb. ground chuck
Salt and pepper, to taste
Brie cheese
caramelized onions
arugula
garlic mayo
4 burger buns

Heat a grill to medium heat.

Divide the meat into 4 patties. Press an indentation in the center so they don't bulge while they cook. Season both sides liberally with salt and pepper.

Grill for 3 minutes on one side, then flip and grill for another 2 minutes. Remove to a plate, top each patty with some of the cheese and tent with foil. Let rest for 5 minutes.

Serve the burgers on buns topped with caramelized onions, arugula and garlic mayo.

Pepperoni Pizza Burgers

As much as I love summer, I always miss Pizza Fridays once the hot weather arrives. I just can't justify cranking my oven to 500 degrees when it's in the 90s. I needed a plan for Friday night and found myself craving both pizza and burgers. A quick spin around the interwebs brought me to Pioneer Woman's Pepperoni Pizza Burgers.

Because of the sausage in these burgers you have to cook them all the way through. Thankfully the fat from the sausage helps keep these burgers from drying out. SP was a bit skeptical of topping a burger with pizza sauce, pepperoni and cheese but he admitted these were good. I was a big fan. I loved the combo of the meats in the patty, the sauce, gooey cheese and tangy pepperoni. I even dipped my burger in some of the leftover sauce as I ate. Yes!

Pepperoni Pizza Burgers

1-1/2 pound ground beef
1/2 pound Italian sausage
1/2 teaspoon Italian seasoning
8 slices (or 1/2 cup shredded) mozzarella cheese
Pepperoni slices
Pizza sauce
Grated Parmesan cheese
4 whole rolls/buns, toasted

Combine ground beef, Italian sausage, and Italian seasoning in a bowl. Knead it together and then form into four patties.

Heat a large skillet or grill pan over medium heat. Add the burgers and cook on one side for several minutes, then turn the burgers. Lay 2 slices of cheese (or a mound of shredded cheese) on each patty, followed by several slices of pepperoni. Allow the burgers to cook all the way through while the cheese melts and the pepperoni warms.

Spread both halves of each roll with some pizza sauce and sprinkle the sauce with Parmesan cheese. Lay the patties on the bottom buns, then top with the top buns.

Chicken and Bacon Burgers with Fried Egg

I love a good chicken burger. My all-time favorite are these Chicken Burgers with Garlic-Rosemary Mayo, but I was looking for something a little different. I've had my eye on Elly's Chicken and Pancetta Burgers with Fried Egg for awhile, but I've been putting off making them until I planted my rosemary. I finally got that done recently so these went straight on the menu.

I decided to sub bacon for the pancetta because we always have bacon in the house. The flavors were a tad smokier but that was alright by me. I love the smell of fresh rosemary that permeates the whole burger - so good. And you can't go wrong topping anything with a fried egg. Such a decadent touch. SP opted to enjoy his without the egg but Baby Girl, a child after my own heart, was adamant about having an egg.

This is a messy sandwich but so, so good. The gooey cheese and the flavorful patty combined with the fried egg and peppery arugula made for a delicious sandwich. Baby Girl, sadly, wasn't a fan of the arugula (too spicy, she said) but polished off the rest of her burger. I'm already salivating thinking about the leftovers for lunch.

Oh and get used to seeing a photo that includes Baby Girl's portion. She's VERY big on being included on the blog right now and, really, how adorable is that?

Chicken and Bacon Burgers with Fried Egg
Slightly modified from Elly Says Opa, adapted from Nigel Slater’s The Kitchen Diaries

4 oz. bacon (or pancetta), diced
1 small onion, diced
2 cloves garlic, minced
2-3 sprigs fresh rosemary, minced
1 lb. ground chicken
Salt and pepper
4 slices provolone cheese
4 eggs
4 buns or rolls, split and toasted
Mayo
Arugula

Heat a skillet over medium heat. Add the bacon and cook until starting to brown at the edges. Add the onion, cooking until translucent. Add the garlic and rosemary. Continue cooking until the bacon is golden brown. Remove the mixture from the pan and set aside to cool for a few minutes.

Once cooled, add the mixture to the ground chicken, along with salt and pepper to taste. Lightly mix everything together and form into 4 patties. Let the patties sit for about half an hour on the counter, or for longer in the fridge.

Wipe out the skillet and place it over medium heat. Add the patties to the pan and cook for about 5 minutes, then flip and cook another 4 minutes. During the last minute, add a slice of cheese to each burger and let it melt. Remove the patties from the skillet.

Crack the eggs into another small skillet and cook to your liking.

To serve, Place a burger patty and a fried egg on each roll.

Shake Shack Burgers

I knew I wanted to take advantage of the gorgeous weather and traditional start of the grilling season over Memorial Day weekend by grilling burgers, but I thought I'd kick it up a notch by finally trying these make-at-home Shake Shack Burgers.

The original recipe calls for cooking the burgers in a skillet, but I was set on grilling so that's what I did. When you look at the ingredients this is a very traditional burger that's elevated by the cooking method and the sauce. The sauce is what makes these burgers. I loved it, SP wasn't a fan. I will definitely be making these again and just letting SP dress his own burger. One of these days I hope to try an actual Shake Shack burger.

Shake Shack Burgers

1/4 cup mayonnaise
1/2 tablespoon ketchup
1/2 tablespoon yellow mustard
2 slices kosher dill pickle, finely chopped
1/8 teaspoon garlic powder
1/8 teaspoon paprika
Pinch cayenne pepper
1 1/4 pounds ground sirloin
Kosher salt and fresh-ground black pepper
1/2 teaspoon vegetable oil
1 tablespoon butter, softened
4 burger rolls, preferably potato
4 leaves lettuce, tops of leaves only
4 slices ripe tomatoes, center-cut preferred

4 slices yellow American cheese

Combine mayo, ketchup, mustard, chopped pickle, garlic powder, paprika and cayenne in a bowl. Set aside.

Form the ground beef into 4 patties. Sprinkle the top side heavily with salt and pepper.

Using a wadded up paper towel, rub vegetable oil on a large stainless steel skillet, then place over medium-high heat until just beginning to smoke.

Split the buns and spread the softened butter on the tops and bottoms of all 4 rolls. Place under the broiler or toast until golden brown. Once toasted, top with 1-2 teaspoons of sauce on each bun. On the top bun, add one leaf of lettuce and one slice of tomato. Set prepped buns on parchment paper.

When skillet is barely smoking, place beef patties in, seasoned side down. Using the back of a spatula, flatten the patties to 4 inches wide. You want the beef to stick and get a nice crust. Season the top side with salt and pepper. Cook until crisp crust forms, about three minutes. Flip burgers and top each with one slice American cheese. Cover and cook until cheese melts.

Transfer patties to bottoms of burger buns and cover with toppings and bun tops. Wrap in parchment paper and let sit for 1-2 minutes to let the juices from the burgers sink into the buns and the sauce to meld with the other toppings and cheese. Don't skip this step, it really makes a difference! Unwrap and serve immediately.

Bruschetta Burgers

We had a taste of summer a few weeks ago and I scrapped my original dinner plans to grill the first burgers of the season. I even made the fire myself (we use a charcoal grill). I was so excited to grill - it's been a long winter cooking burgers indoors and I've missed that smokey flavor. Those burgers were so delicious I immediately went looking for another burger recipe to make the following week and remembered Cassie's Bruschetta Burgers.

I immediately vetoed the idea of making my own bruschetta for two reasons - I was lazy and our supermarket makes an awesome version for their olive/appetizer bar. I plan to make my own this summer when tomatoes are in season and I'm growing my own basil but for now the store-bought was fine. I also decided to sub fresh mozzarella for the provolone because, well, I can't get enough of fresh mozzarella.

These were delicious, sort of like the caprese burgers I loved last summer. The garlic butter on the buns was an awesome touch and I especially loved the balsamic mayo, which Baby Girl was eating by the spoonful. Thanks for a killer burger, Cassie!

Bruschetta Burgers
As seen on Cassie Craves, inspired by Cookies and Cups

1/4 cup mayonnaise
2 tablespoons balsamic vinegar (more to taste, if desired)

6 Roma tomatoes, seeded and chopped
1/4 cup basil, sliced into a chiffonade
1/4 cup finely-shredded asiago cheese
1 tablespoon grated onion
1 garlic clove, finely grated
Salt and pepper to taste
Extra-virgin olive oil (I usually use a couple of tablespoons)

4 hamburger burger patties
Salt and pepper to taste
4 slices fresh mozzarella cheese

4 sandwich buns
1/4 cup butter, softened
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
Pinch each of salt and pepper

Combine the mayonnaise and balsamic vinegar in a small bowl; refrigerate until serving.

Combine tomatoes, basil, asiago, onion, garlic, salt and pepper, and olive oil in another small bowl; cover and refrigerate until serving.

Season burger patties with salt and pepper and grill, turning once, until desired doneness. Top each patty with a slice of cheese and remove from heat.

Combine butter, garlic powder, Italian seasoning, and salt and pepper. Spread evenly over each bun half and place buttered-side-up on a baking sheet. Broil or toast until browned and fragrant.

Serve the hamburgers on the garlic bread buns, topped with a generous pile of bruschetta and a slather of the balsamic mayonnaise.

Recipe Swap: Gouda Bacon Cheeseburgers

I was given Nichole's blog, The Cookaholic Wife, for the latest round of the Blogger's Choice recipe swap. I star many of her posts in Google Reader so I knew I'd have a tough time picking something to make. I couldn't decide between these cannoli cupcakes, or the bacon jalapeno popper grilled cheese, or the tomato stack salad with corn and avocado (which I'll be making as soon as tomatoes are in season). I knew I needed to go back to my usual method for these swaps - picking an ingredient like ground beef and seeing what's on the blog.

Despite Nichole's claim to not make a lot of burgers I found a few that sounded incredible and ultimately let SP choose. He picked the Gouda Bacon Cheeseburgers.

I cooked the onions in the morning since they take the longest amount of time. The original recipe called for 3 tablespoons of steak sauce but I only used one - my onions cooked way down and more than 1 tablespoon seemed like too much and I didn't want the flavor to be overpowering.

This is one huge, messy, delicious burger. This was my first time buying smoked Gouda and I loved the flavor. Baby Girl and I split a piece before topping the burgers. I could really taste the smokiness of the cheese and the sweetness of the onions.


Gouda Bacon Cheeseburgers
As seen on The Cookaholic Wife, adapted from Cassie Craves, inspired by Rachael Ray

1 1/2 lb. ground beef
1 teaspoon Worcestershire sauce
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
2 onions, thinly sliced
1 tablespoon brown sugar
1 tablespoon steak sauce
4 slices bacon, cooked
4 slices smoked gouda cheese
4 hamburger buns, toasted
Lettuce, tomato, mayonnaise, for serving

Combine the ground beef, Worcestershire sauce, salt and pepper and form into 4 patties. Refrigerate until ready to use.

Melt the butter and olive oil in a medium saucepan over medium-low heat. Add the onions and brown sugar and cook until lightly caramelized, about 20-25 minutes. Once the onions have caramelized, stir in the steak sauce until coated. Remove from the heat.

Preheat a grill or grill pan and, once hot, place the burgers on the grill and cook for 3-4 minutes per side, depending on their thickness. Place a slice of cheese on top of each burger and allow to melt.

Spread mayonnaise on both sides of each toasted roll. Place the burger on the bottom of the roll, top with lettuce and tomato, a slice of bacon cut in half and a generous topping of the smothered onions.

Horseradish Burgers with Havarti and Caramelized Onions

I love a good burger, even when I have to cook it inside in a pan rather than out on the charcoal grill. I'm not a big fan of winter and there's just something about eating a burger that makes me feel like summer is right around the corner. These Horseradish Burgers with Havarti and Grilled Onions have been on my radar for awhile. The combination of SP chastising me for letting the freezer get out of control again after we had to toss everything due to Hurricane Sandy and an open bottle of horseradish that he bought after Christmas to go with the leftover roast beef meant it was time to finally make them.

This is one outstanding burger. I'd never had havarti before and didn't know what to expect, so Baby Girl and I sampled it together. In my opinion it tastes like a mild cheddar and I loved the creamy texture. Baby Girl kept asking me to cut off more so she could eat it, so I made sure to put a nice, thick layer on her burger, which she gobbled up.

I always have her smell and taste the ingredients I use in the kitchen and she was quite surprised by the pungent smell of the horseradish, which added a nice, subtle bite to the burgers without being overwhelming. I loved the sweet onions with the beefy burger, the creamy cheese and the bite from the horseradish. It's so simple but really delicious.

Horseradish Burgers with Havarti and Caramelized Onions

1 1/4 pounds ground beef
1/8 cup prepared horseradish
Salt and pepper
1 teaspoon olive oil
1 large onion, thinly sliced
Sliced havarti cheese
Burger buns
Mayo

Put beef in a bowl. Add the horseradish, salt and pepper. Form into 4 equal patties. Use your thumn to press an indentation in the center of each patty. Allow to rest at room temperature while you make the caramelized onions.

Heat the oil in a non-stick skillet over medium heat. Add the onion and season with salt and pepper. Allow the onion to cook slowly - you want it to get brown without burning. Lower the heat if the onions are browning too quickly. If the pan seems dry, add a splash of water. The onions should take about 20-30 minutes to turn a nice, caramel color and become soft.

When the onions are done, cook the burgers on a grill or in a pan on the stove. (I cooked these in a pan over medium-high heat for about 4 minutes per side, which was a perfect medium). After you flip the burgers add the cheese. Cover for 1 minute to melt the cheese. Serve on toasted buns with mayo and the caramelized onions.

Recipe Swap: Island Burgers with Pineapple-Lime Salsa

It's time for another round of the Blogger's Choice Recipe Swap. I was excited when I received Coleen's blog, The Redheaded Baker, which recently went through a redesign and name change.

My game plan when I get a blog for these swaps is to figure out what ingredient or cuisine I want to make to help me narrow down the choices. I had already made my menu for the week and decided I wanted something using ground beef. As soon as this recipe for Island Burgers with Pineapple-Lime Salsa popped up I remembered printing it out when Coleen made it for the Sandwich/Burger Swap.

This was a messy but delicious burger. I didn't even bother making it for SP - he got a plain cheeseburger to dress however he wanted. It worked out well because my one pound of ground beef only yielded 3 burgers. The jerk seasoning added a wonderful flavor to the burger patties - I don't think I've ever had anything with that particular flavor profile before. The pineapple salsa was a great compliment to the burger but the chunks made it tough to eat - pieces were falling out left and right. It was worth it, though.

Island Burgers with Pineapple-Lime Salsa

For the salsa:
1/2 can diced pineapple, cut into smaller dice
2 tablespoons diced red onion
2 tablespoons cilantro leaves, chopped
Salt and pepper to taste
Juice of 1/2 lime
1 avocado

For the burgers:
1 1/2 lbs ground beef
4 teaspoons jerk seasoning
Cooking spray
4 slices Cheddar cheese
4 burger rolls

Early the day of serving, or the day before, combine the pineapple, sweet onion, cilantro, pepper and lime juice in a medium bowl. Toss to combine. Let stand at room temperature for one hour, then cover and refrigerate.

Divide the beef into 4 portions and form into patties. Use your thumb to press an indentation in the center of each patty. Sprinkle the top half of each patty with 1/2 teaspoon jerk seasoning. Flip over and season the other side with another 1/2 teaspoon of seasoning.

Spray a heavy skillet with cooking spray and heat over medium heat. Preheat your oven to 400 degrees. Add the burgers and cook for 6 minutes. Split the burger buns, and place on parchment-lined baking sheet.

Flip and cook another 6 minutes for medium-rare doneness and place baking sheet in oven to toast the burger buns.

Place one slice of cheese atop each burger and cover the skillet with a large pot lid to melt the cheese. While cheese is melting, dice the avocado, add it to the salsa, and gently toss to combine.
Place one patty on each roll and top with a spoonful or two of the salsa.

Copycat Red Robin Banzai Burger

We bought a club pack of ground beef recently. I'm always looking for quick, make-ahead dinners for Tuesday nights when I get home late from my exercise class so I thought I'd make burgers. I love experimenting with different toppings and for some reason I wanted to try making a Copycat Red Robin Banzai Burger even though I've never had that particular burger.

Since I've never actually tried a Banzai Burger at Red Robin I can't vouch for how this compares but I can say this was delicious. The teriyaki really soaks into the meat and pineapple slices. I marinated my patties for about 4 hours and that was plenty of time. I loved the combination and will definitely make these again (although now I'm on a burger kick and want to try different varieties).

Copycat Red Robin Banzai Burger

2 lbs ground round
1 bottle Teriyaki sauce (recommend Kikkoman's Teriyaki Takumi Collection - Original )
Sliced fresh pineapple
Sliced cheddar cheese
Shredded Romaine lettuce
1 tomato, thinly sliced
Burger buns
Mayonnaise

Form the beef into patties. In a shallow baking dish, add some of the teriyaki sauce, place the beef patties on top in a single layer, turning to coat all sides with the sauce. (Be sure to reserve some sauce for the pineapple slices). Cover container and refrigerate 4 hours.

Place pineapple slices in a separate container, add enough teriyaki sauce to coat well, cover and chill.

Preheat grill to medium. Cook hamburgers 3 to 5 minutes per side, or to desired doneness. When you flip the burgers, add the pineapple to the grill and cook until grill marks show, turning once. About 1 minute before the burgers are done, place slices of cheese on top of each patty to melt.

To assemble burgers: Spread mayonnaise on the top and bottom of each bun. Place hamburger patty on bottom bun and top with 1-2 tomato slices, and 1-2 grilled pineapple slices. Cover with about 1/3 cup shredded lettuce and place top bun on sandwich.

Onion Ring Topped BBQ Bacon Cheeseburgers

It's been awhile since we've had beef burgers but as soon as I saw these Onion Ring Topped BBQ Bacon Cheeseburgers over at Lauren's Latest I had to put them on the menu. SP is a big onion ring fan and he also enjoys BBQ sauce on his burger.

I forgot to buy a slicing tomato at the supermarket so I opted to leave off the lettuce and tomato. Big mistake. These burgers were good, don't get me wrong, but I was missing something green. A side salad or something to cut the richness of the beef and onion rings. I've also decided I don't like pieces of onion in my burgers since they don't have a chance to fully cook on the grill.

Once again I was blown away by an Alexia product. We've been enjoying their shoestring fries for some time now but the onion rings were a new purchase. Delicious and crispy in the oven - you can't beat that.

Onion Ring Topped BBQ Bacon Cheeseburgers
Slightly modified from Lauren’s Latest

1 13.5 oz. package frozen onion rings, such as Alexia brand
4 slices thick cut bacon
1 lb. ground beef
1/2 cup BBQ sauce + more for the burgers
Salt & pepper, to taste
4 slices cheese
4 hamburger buns, toasted
Mayo, lettuce, tomato, pickles, etc.

Cook onion rings according to package directions. While those are in the oven, cook your bacon to desired doneness and drain on paper towels.

For the burger patties, in a small bowl, stir ground beef, BBQ sauce, salt and pepper together until combined. Divide into two equal patties. Spray a nonstick skillet with cooking spray and cook patties on medium heat for approximately 7 minutes per side. Alternatively you can use a grill. In the last few minutes of cooking add the cheese and melt.

To assemble burgers, place cooked patty onto hamburger buns and top with more BBQ sauce, cooked bacon, onion rings and any other desired toppings. Serve immediately with any remaining onion rings and/or fries.

Black Bean Burgers with Avocado Basil Cream


I had two more Black Bean Burgers in the freezer and wanted an easy, no-fuss dinner for the end of the week. I had seen this Avocado Basil Cream on How Sweet It Is so I thought I'd give it a whirl.


Please forgive the photos. I thought I'd try my hand at those staging shots so many bloggers do with the ingredients and the finished product. I even edited both of these photos in PicMonkey, although I doubt you can tell. My photography is a work in progress, that's for sure.

Anyway, on to the cream. It was delicious but I did modify it a bit. I've been burned before by avocado creams that have way too much sour cream, so much that you can't taste the avocado anymore. I was worried that this recipe had too much and since I was only using half an avocado to begin with I decreased the sour cream substantially. I also added lemon juice because I felt it needed a little something to brighten and lighten it up. It was delicious paired with the black bean burgers.

A funny story - Baby Girl insists on helping me in the kitchen these days (not that I'm complaining, I love it) and I also want her to taste and smell the ingredients. I offered her avocado, which she declined, but as soon as I opened the sour cream she asked for a taste. I ended up spoon feeding her at least 1 tablespoon of sour cream before I cut her off. First lemons and now sour cream? The kid is weird.

Avocado Basil Cream
Modified from How Sweet It Is

1 tablespoon sour cream
1 avocado, chopped
10 medium basil leaves, chopped
1/4 teaspoon salt
Pinch of pepper
Lemon juice, to taste

Add sour cream, avocado, basil, a pinch of salt and pepper to a food processor, blending to combine. Once somewhat smooth, add lemon juice, blending a bit and then tasting. Keep tasting and seasoning until you're happy.

Recipe Swap Roundup - Burgers/ Sandwiches Part 2

Happy 4th of July! I hope everyone is having a safe, happy and delicious holiday. As we celebrate our nation's independence, many of us will be grilling burgers with friends and family. Who doesn't love a good burger or sandwich? I don't know many people. I also love sandwiches, especially when they're simple to put together. They can make an excellent weekday meal and the options are endless.

Black Bean Burgers


I'll admit it, I never understood vegetarian burgers. In my mind, a burger is made from meat, not vegetables, which is why I was completely shocked when I took a bite of these Black Bean Burgers and loved them. Absolutely loved them. I made these for SP, who is trying to eat less meat per doctor's orders, to keep in the freezer for easy cooking. He had wanted to buy some premade burgers at the supermarket, but at $4 for 4 burgers I knew I could make them cheaper at home, not to mention no preservatives.

As they were cooking in the pan the smell was making my stomach growl, but I still didn't think I'd like them. We split one with dinner to make sure they were tasty, and wouldn't you know it I was a little bummed that I only got half a burger. Even Baby Girl liked these, which was a nice surprise. Since the mixture is a bit too wet for the grill these need to cook in a pan with just a touch of oil. After they cooked I let them cool before placing them on a baking sheet and sticking them in the freezer for an hour or so to firm up.


After they froze a bit I wrapped each patty individually and placed them in a freezer bag. I cooked the patty we split in the microwave for about 90 seconds before serving on a bun with a little mayo. SP liked his with just the mayo but I think some additional veggies like lettuce and tomato would work well, maybe even some slices of onion. However you choose to serve it, you can't beat the flavor. I loved everything about these burgers, especially the price. I estimate these cost less than $3 to make (6 burgers), plus I know exactly what ingredients I used. Win-win.

Black Bean Burgers
As Seen On Annie's Eats
Yield: 6 burgers

3/4 cup panko
3/4 teaspoon Italian seasoning
3 tablespoons plus 2 teaspoons olive oil, divided
2 (15 oz.) cans black beans, drained and rinsed, divided
2 large eggs
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 red bell pepper, seeded and finely diced
1/4 cup fresh cilantro, minced
1 shallot, minced

Place a medium skillet over medium-high heat. Combine the panko, Italian seasoning and 2 teaspoons of the olive oil and mix with a fork to blend. Add the mixture to the skillet and toast the panko, stirring frequently, until light golden brown. Remove from the heat and let cool to room temperature.

Place 2 1/2 cups of the beans in a large bowl and mash with a potato masher or a fork until mostly smooth. In a separate bowl, combine the eggs, 1 tablespoon of the oil, cumin, salt and cayenne. Whisk to blend. Add the egg mixture, toasted panko, the remaining 1/2 cup beans, bell pepper, cilantro and shallot to the bowl with the mashed beans. Stir together until evenly combined.

Divide the mixture into 6 equal portions, about 1/2 cup each. Lightly pack into 1-inch thick patties. (At this point the patties can be covered tightly with plastic wrap and refrigerated for up to 24 hours before cooking.) Heat 1 tablespoon of the oil in a large skillet over medium heat until shimmering. Carefully lay half of the patties in the skillet and cook until well browned on both sides, about 8-10 minutes total. Transfer the cooked burgers to a plate, tent with foil, and repeat with the remaining oil and bean patties. Serve warm.

To freeze - Place a sheet of wax paper on a large baking sheet. Put burgers, with about 2 inches between them, on the baking sheet, then place baking sheet in the freezer for an hour or until patties are frozen. Wrap each patty individually in wax paper or freezer paper and place into a freezer bag.

Recipe Swap: Caprese Burgers

I love burgers. I love caprese (tomato, fresh mozzarella and basil). But I had never combined the two until I got my recipe for the BBQ recipe swap. The theme was something made on the grill or taken to a BBQ and I lucked out with Coleen's Basil Burgers. As soon as I saw the ingredients I knew this would be an excellent recipe to turn into a Caprese Burger.


The original recipe called for dried basil, but since SP got me a gorgeous basil plant I subbed fresh. I also cut the recipe in half because it was just the two of us eating the burgers. I got 3 good-size burgers from the 1lb of ground beef, which I subbed for the meatloaf mix (ground beef, pork and veal) since we had a lot of ground beef in the freezer. In addition to the fresh mozzarella, which was optional in the original recipe, I added a smear of mayo, a thick slice of fresh tomato and some basil leaves.


This was one crazy delicious burger. I'm kicking myself for not realizing sooner how well caprese and burgers go together. Since we eat a lot of caprese salad during the summer months I plan to make these burgers frequently. SP had been a little nervous about the addition of Worcestershire, basil and garlic powder (he's a burger purist and likes salt and pepper only), but he cleaned his plate in no time flat and deemed this a great variation. Caprese Burgers
Adapted from Does Not Cook Well With Others
Makes 3 burgers

1 pound ground beef
2 tablespoons Worcestershire sauce
1 tablespoon minced fresh basil
1/8 teaspoon garlic powder
Salt and pepper
Hamburger rolls, toasted
Sliced mozzarella cheese
Mayo, for serving
Sliced tomato, for serving
Leaves of fresh basil

Gently combine ground beef, Worcestershire, basil, garlic powder, salt, and pepper. Divide into 4 portions. Grill over high heat about 6 minutes, turning once, or until desired doneness. Place a slice of cheese on each burger and allow to melt. Serve on rolls with mayo, sliced tomato and fresh basil.

Asian Turkey Burgers with Spicy Lime Mayo

I can't remember the last time I made a burger. It must have been sometime over the summer. And as much as I love a good beef burger, I've come to realize that I'm a big fan of chicken or turkey burgers. The mild flavor of poultry makes it so much easier to add whatever flavors you like. This is a new phenomenon for me but I'm embracing it in these days of attempted weight loss.

I recently discovered How Sweet It Is and boy am I glad I did. She's got some truly delicious-sounding recipes that I'm dying to make. When I saw her post about these Asian Turkey Burgers with Spicy Lime Mayo I had to take her advice and add them to my weekly menu.


Head over to Jessica's blog for some drool-inducing photos. Mine are ehh, as usual. But don't let that deter you from making these immediately. I prepped the burgers in the morning before work and the smell alone was intoxicating. As far as I'm concerned you really can't go wrong with garlic, ginger, scallions, soy sauce and sesame. Add the delicious Spicy Limo Mayo and you've got one hell of a burger. Try these soon. You won't be disappointed.

Asian Turkey Burgers
How Sweet It Is

1 pound ground turkey breast
2 garlic cloves, minced or pressed
1/2 teaspoon freshly grated ginger
3 green onions, thinly chopped
1/2 tablespoon soy sauce
1/2 tablespoon rice wine vinegar
1/2 tablespoon sesame oil
1/2 tablespoon toasted sesame seeds
4 burger buns
Lettuce and sliced tomato for serving

Combine all ingredients (except buns) in a large bowl and mix gently with your hands until just combined – do not overmix. Form turkey into 4 patties about 1/2 inch thick. Heat a skillet (in my case – a cast iron grill pan) over medium-high heat (or preheat your grill) and once hot, add burgers. Cook for 4-5 minutes per side.

Toast buns if desired, then top burgers with mayo and serve.

Spicy Lime Mayo

1/4 cup mayonnaise
1 teaspoon Sriracha sauce (or more if desired)
Zest of half of a lime
Juice of half a lime

Combine all ingredients in a bowl and mix until smooth and combined.
